A favorite at all gatherings, we wanted to share this healthy and delicious way to enjoy kale.

Remove center stem from each branch of kale and use only the tender leafy parts – chop kale finely.

Pour dressing over kale 1/2 to 1 hour before dinner to allow acids to soften the kale slightly.

Dressing (apx. equal parts):

  • Olive oil
  • Balsamic vinegar
  • Touch of maple syrup
  • Juice of 1 lime
  • Add fresh thyme or any other herbs of choice.

CHOP following options into the salad:

carrot | onion | pecans | toasted pine nuts | cherry tomatoes | grapes | chick peas

Add feta cheese, toss and serve.
